Hi Jessica, thanks for sharing your story with us. To start, maybe you can tell our readers some of your backstory.
DINO BARS, from the Functional Food Company, was born from Jessica and Ian Saultz’s passion for healthy living. Raised in Germany, Jessica’s upbringing on fresh produce inspired her. When their son Liam couldn’t tolerate refined sugars, they sought sugar-free options, sparking the idea for DINO BARS. After relocating to the US with their two children, Jessica’s homemade snacks became a hit. Now, produced in Charleston, South Carolina, DINO BARS offer nutritious snacks for kids nationwide, with Aiden joining their family along the way.
I’m sure it wasn’t obstacle-free, but would you say the journey has been fairly smooth so far?
Oh, I wish I could say it’s been a perfectly smooth ride, but like any entrepreneurial journey, it’s had its fair share of bumps! When we started Dino Bars, we had this big dream of creating a truly clean, organic snack that parents could feel great about giving their kids—something without all the hidden sugars and artificial ingredients you find in so many snacks.
One of the biggest challenges early on was educating consumers about what makes our bars different. A fruit bar with an edible paper? That was a totally new concept! We had to find creative ways to explain why our organic rice paper was such a game-changer—it keeps little hands mess-free while keeping the bar clean and protected.
Another big hurdle was scaling production while staying true to our values. We refused to cut corners on ingredients, but that meant navigating higher costs, sourcing the best organic fruits, and ensuring every batch met our high standards. Finding the right manufacturing partners that aligned with our vision was a journey in itself!
And, of course, like so many small businesses, we launched right before the pandemic, which brought all kinds of unexpected challenges—from supply chain delays to shifting consumer buying habits. But through it all, we stayed committed to our mission: making snack time easier for parents and healthier for kids. Seeing families fall in love with Dino Bars has made every challenge worth it!

At Dino Bars, we create organic, mess-free fruit bars for kids, but our mission goes beyond just making a snack—we’re here to make healthy eating easier and more fun for families. Our bars are made with simple, organic ingredients that parents recognize—just real fruit, healthy fats, and absolutely no added sugar or artificial junk.
What really sets us apart is our unique, edible paper made from organic rice paper. It covers the bar completely, keeping little hands clean while protecting the fruit from sticking to the packaging. Parents love it because it means less mess, and kids love it because it’s fun to eat!
We’re incredibly proud of the trust we’ve built with families. Hearing from parents who say things like, “Finally, a snack I feel good about giving my toddler!” or “My picky eater actually asks for Dino Bars!” makes every challenge worth it. We’ve also been able to expand into more stores, making Dino Bars accessible to even more families—a huge milestone for us!
At the end of the day, we’re not just making snacks. We’re helping parents feel confident about what they’re feeding their kids while making snack time something everyone can enjoy.

If there’s one thing I’d love for parents to take away, it’s that healthy eating for kids doesn’t have to be complicated.
