Hi Jason , can you start by introducing yourself? We’d love to learn more about how you got to where you are today?
I’ve been cooking since I was 10 years old. My dad was a chef and owned a catering business and I helped him time to time. Cooking became fun for me. My first job was in a restaurant as a dishwasher and I quickly moved up to a cook. I joined the marine corps and my job was in the Marshall. When I got out of the service I owned and ran a sandwich and protein shop in a gym for a while. My second stint in nc I purchased a food truck 5 years ago without a name or logo. My best friend Paul said all the customers at his bar would always ask “what’s Jay cooking tonight” Paulnsaid you should name your truck that and I did. I’ve always had a passion for smoking food but one day having a party at my house I made burgers and a secret sauce. All my friends said you can sell those and make big money. I laughed cause I was thinking these are just burgers. People seemed to really like the secret sauce and the seasoning I used on my smash burgers. Then my business just took off
Would you say it’s been a smooth road, and if not what are some of the biggest challenges you’ve faced along the way?
For me it’s been pretty smooth. I mean there are always slow weeks and slow months but all in all it never feels like I work cause I have fun doing it.

I run my food truck with one other worker. I set up in caterer and Onslow county. I specialize in smash burgers, burnt ends, smoked meats. My smash sauce and other homemade sauces. I’m proud of any food that makes people happy.
