Hidden Gems: Meet Fiona Cruz of Penn. To Palmetto Pastries

Today we’d like to introduce you to Fiona Cruz

Hi Fiona, thanks for sharing your story with us. To start, maybe you can tell our readers some of your backstory.
My name is Fiona Cruz and I am a wife and mother to 3 children. I am originally from Allentown, Pennsylvania. My passion for baking started when I was a child. I loved being in the kitchen with my mom while she cooked. It always felt like a safe space to be. I carried on my love for baking as I turned into an adult and had my old children. I started working at a small bakery where I learned quite a bit of knowledge. This is where I really started to excel and realized I wanted a bakery of my own one day. I worked there for about 5 years preparing and baking all the yummy Pennsylvania Dutch treats that the North is known for. I also picked up a niche for Cheesecakes. I love creating different flavors and have worked hard to perfect my recipes. My family and I have recently moved to Bluffton South Carolina and I decided it was time to open a small bakery business. My 5 year goal is to open a small storefront so I will be able to showcase all my products. As for now I love selling at the local farmers market’s and preparing private orders. Its nice to see my customers smiling faces every Saturday as they walk up to my booth.

I’m sure it wasn’t obstacle-free, but would you say the journey has been fairly smooth so far?
My husband and I started our family when we were young, so I put all my energy and focus into raising my children. My dad always told me “you will know when it’s your time just worry about raising your children “. It was all about divine timing because every step I’ve taken to get here has been a positive outcome. I welcome any challenges that may come my way because they are growth and learning experiences.

Alright, so let’s switch gears a bit and talk business. What should we know?
My business name Penn. To Palmetto Pastries originated because I’m from Pennsylvania and now live in the sunny Palmetto state. I specialize in all different flavors of cheesecake! Keylime being the number 1 favorite, followed by Reeses Peanutbutter. I also have a hand in the Pennsylvania Dutch recipes including Whoopie Pies, Apple Dumplings, Tandycake, Funny Cake, & Shoofly Pie just to name a few. I am at the local farmers market’s and always take online orders.

Any big plans?
My 5 year goal is to have a little bakery storefront. I would love to showcase all my products daily. I want to have a bakery cafe, with cute seating and a comfortable vibe. I will have a big display of all different varieties of cheesecake . I would love a coffee station with hand crafted drinks to compliment all my pastries.
