Today we’d like to introduce you to Erika Hernandez
Hi Erika, it’s an honor to have you on the platform. Thanks for taking the time to share your story with us – to start maybe you can share some of your backstory with our readers?
I was unable to pursue higher education in the state of South Carolina. due to restrictions on DACA (deferred action for childhood arrivals) recipients ,by the then governor Nikki Hailey . It was a difficult time , that limited my career opportunities. Regardless I was very determined to work hard . With the help and support of my family I was able to open a food truck . It was a long journey of trials and errors , but we didn’t quit . Our persistence paid off . Soon we found a place to move the taqueria into ,in a small plaza on hunts bridge road . Our popularity grew and within one year we outgrew that space . During covid we were able to find a new vacant place (our current location on pleasantburg Dr). We felt very blessed , that even during the difficult times during and after covid our small business survived and thrived. I am very grateful for my amazing family , friends ,and customers , who made my dreams of success a reality .
Would you say it’s been a smooth road, and if not what are some of the biggest challenges you’ve faced along the way?
Career restrictions lead me to start my own business. Starting my own business I faced a lot of trials and errors ,but learned a lot along the way.
As you know, we’re big fans of Taqueria Mixtepec . For our readers who might not be as familiar what can you tell them about the brand?
The name of my business is Taqueria Mixtepec. Named in honor of the town in Oaxaca Mexico my family is from . Oaxaca is known for being a culinary gem . My family helped me create a unique menu inspired by Oaxacan cuisine. The menu includes things like fresh made blue corn tortillas, corn truffle,squash blossom , and our very popular Tlayudas (large crispy corn tortilla topped with fresh veggies, cheese and meats).
What are your plans for the future?
The goal for my business has always been to provide great service and great quality food .I am starting my own small family, so there will not be any major changes soon. We hope to continue serving our customers for many more years.
