Hi Hans, can you start by introducing yourself? We’d love to learn more about how you got to where you are today?
I came to the United States in 1998 and began as a kitchen helper, learning every aspect of restaurant operations through hard work, curiosity, and dedication. Over the years, I advanced into management roles, eventually becoming a General Manager and later a restaurant owner in New York City.
Throughout my journey, I’ve had the opportunity to work across a wide range of culinary concepts, including Thai, Japanese, Asian fusion, and Vietnamese fusion. Each experience deepened my understanding of flavor, culture, and the art of hospitality.
Today, I bring more than a decade of experience in Asian cuisine, with a particular focus on modern Japanese ramen. My training in professional ramen craftsmanship has been shaped by intensive study and a deep respect for traditional Japanese techniques.
At Ramen Bar Kazoku, my philosophy centers on depth of flavor, precision, and the use of premium ingredients. I strive to create dishes that honor tradition while embracing innovation. Signature offerings such as the A5 Wagyu Truffle Ramen, Kazoku Black — our Black Garlic Tonkotsu ramen — and Chashu Don — char-braised pork over rice —reflect that balance, combining classic foundations with contemporary creativity to deliver a memorable dining experience.
Alright, so let’s dig a little deeper into the story – has it been an easy path overall and if not, what were the challenges you’ve had to overcome?
Moving from New York to Charlotte in 2021 was both exciting and challenging. We were starting over in a completely new market where no one knew who we were, so we had to build our reputation from the ground up in South Charlotte.
Establishing ourselves in a new community took time, patience, and consistency. One of the biggest challenges was earning the trust of our guests while introducing our vision and culinary standards to a new audience.
Another significant challenge has been building the right team. In the restaurant industry, success depends on having people who not only possess the necessary skills, but who also share your commitment to hospitality, quality, and attention to detail. Finding team members for both the front and back of house who align with our standards and culture has been an ongoing process.
While the journey hasn’t always been easy, those challenges have made us stronger, more resilient, and even more committed to delivering an exceptional dining experience every day.
Alright, so let’s switch gears a bit and talk business. What should we know?
Kazoku means “family,” and that philosophy is at the heart of everything we do. After owning and operating restaurants in New York City, we moved to Charlotte in 2021 with a dream: to bring authentic Japanese comfort food, warm hospitality, and a true sense of community to our new home.
Our specialty is craft Japanese ramen, made with house-made broth, tare, toppings and aroma oil to create rich, distinctive flavors. Each bowl is carefully crafted with its own unique character, rooted in traditional techniques and authentic taste.
For guests who prefer something other than ramen, we also offer a variety of flavorful rice dishes. In addition, our full bar features a curated selection of cocktails, sake, beer, and wine to complement the dining experience.
We’re passionate about sharing what real ramen is all about while creating a place where everyone feels welcome. We’re also proud to offer keto-friendly and gluten-free ramen options so more people can enjoy the experience.
What do you like and dislike about the city?
What I love most about Charlotte is the people. They’re warm, friendly, and welcoming, which made our transition here much easier. Charlotte is also a city full of growth and opportunity. It’s constantly evolving, and that creates an exciting environment for both businesses and the community.
One challenge I’ve noticed is that, at times, some diners can be drawn more to the atmosphere or appearance of a restaurant than to the food itself. But as Charlotte’s culinary scene continues to mature, I see a growing appreciation for authenticity, craftsmanship, and quality—and that’s very encouraging.
