Hi Waleska , please kick things off for us with an introduction to yourself and your story.
My journey in the food industry started at a young age. I come from a family that has owned Mexican restaurants since 2003, so I grew up surrounded by the culture, flavors, and hard work that goes into creating authentic Mexican cuisine. By the time I was 14 years old, I was already involved in the family business, which is where my passion for cooking and hospitality truly began.
In April 2024, I opened La Katrina Mia, a Mexican Latin cuisine food truck that focuses on bringing people together through food. Being a chef is more than just cooking for me — it’s about creating memorable experiences and watching people enjoy my dishes. That joy and connection with others is what drives me every day.
What makes my business especially meaningful is that my food truck is centered around events. I love being part of people’s most special moments, whether it’s weddings, birthdays, or other celebrations. Being able to serve food on some of the best days of their lives is incredibly rewarding and reflects my passion for both food and community.
Today, my journey continues to grow as I build my brand, share my culture through my cuisine, and create unforgettable experiences for every customer I serve.
Can you talk to us a bit about the challenges and lessons you’ve learned along the way. Looking back would you say it’s been easy or smooth in retrospect?
The journey has not always been a smooth road. Like many small business owners, I’ve faced challenges that tested my strength, patience, and faith. Starting my food truck required a lot of hard work, from securing equipment and permits to building my brand and gaining customers’ trust. There were moments of uncertainty, long hours, and financial risks that came with opening my business.
Another challenge was stepping out on my own and carrying the responsibility of representing my family’s legacy in the restaurant industry. Coming from a family that has been in this business since 2003 gave me experience, but it also came with pressure to maintain high standards and create something unique.
Working in the event industry also brings its own challenges, such as managing busy schedules, meeting different customer expectations, and making sure every event runs smoothly. However, each obstacle has helped me grow stronger, more determined, and more passionate about what I do.
Despite the struggles, every challenge has been worth it. Seeing people enjoy my food and being part of their special moments reminds me why I started and continues to motivate me to keep growing.

What sets me apart is the experience I provide. My business is not just about selling food — it’s about creating joy, celebrating culture, and delivering a personalized experience for every event. My goal is always to make each customer feel special and leave them with unforgettable memories through my food.
Are there any important lessons you’ve learned that you can share with us?
One of the most important lessons I’ve learned on my journey is the value of perseverance and believing in yourself, even when things are difficult. Building La Katrina Mia taught me that success doesn’t happen overnight — it takes patience, consistency, and a willingness to learn from challenges.
I’ve also learned that passion and purpose are essential. When you truly love what you do, the long hours and obstacles become part of the process, not a burden. Staying connected to my purpose — serving others, sharing my culture through food, and being part of people’s special moments — keeps me motivated.
Another important lesson has been the importance of community and relationships. Treating customers like family, providing quality service, and building trust has helped my business grow and created meaningful connections.
Overall, this journey has taught me to stay humble, keep learning, and never give up on the vision God has placed in my heart.
