Community Highlights: Meet Patricia Floesheimer of goat.sheep.cow.

Today we’d like to introduce you to Patricia Floesheimer.

Hi Patricia , thanks for joining us today. We’d love for you to start by introducing yourself.
Trudi, my business partner, and I have been best friends since we met at a wine dinner in 2007 and we haven’t run out of things to talk about since. Neither of us was aware of the other’s need of an escape hatch from our lives in the cold, cold north until after a few visits with my oldest daughter who was attending CofC.
We relocated here from NJ in 2009. Even then we could see that Charleston was especially culinarily rich despite its relatively small population size.
We had some wine and cheese retail experience through a family business and, originally, our business plan was centered on a wine bar/wine shop concept. But after some serious research, (ie eating and drinking all over town) we refocused to feature what WASN’T being done here: CHEESE. And the rest is history!

Would you say it’s been a smooth road, and if not what are some of the biggest challenges you’ve faced along the way?
Where to begin!?! We’ve navigated onward through divorce, hurricanes, cancer, pandemic, tariffs, pestilence; you name it. That which does not kill you makes you stronger. (Just kidding about the pestilence part.)
Our latest challenge has been the sale of the space that houses our original shop on Church Street. But, as is our habit, we turned the preverbal lemonade-from-lemons trick and we’ll be opening the newest iteration of gsc at 11 Fulton Street sometime in late summer. This beautiful structure was purpose-built in 1850 as a brothel by a rather notorious Charleston madame. We’re delighted to be continuing her female entrepreneurial spirit!

We’ve been impressed with goat.sheep.cow., but for folks who might not be as familiar, what can you share with them about what you do and what sets you apart from others?
We are all about cheese, wine, charcuterie, caviar, and gourmet groceries. Our small business brings the knowledge, service, and love of product that you just can’t find in a big box grocery store. We could not be more proud of our staff and the part they play in maintaining our reputation as the place to find specialty foods in Charleston.

What do you like and dislike about the city?
We absolutely adore the exciting food scene of this town and we absolutely hate how hard it is to find parking.
