Today we’d like to introduce you to Chad Mundt.
Hi Chad, so excited to have you with us today. What can you tell us about your story?
I have wanted to be a chef since I was 12 years old, but it was not an acceptable profession for my family so I went a different career path. My, now, ex-wife had an opportunity to do an ex-pat assignment in France and we moved in 2011. It was there that I did an apprenticeship as a Boulanger and Patissier. I worked at Fournil St. Esprit during my time in France. I started working part time at Le Petit Croissant in 2018 and through the years as the bakery started doing more business my hours and my role increased. In April of 2023 I bought the business from the original owner and have been growing it every month.
I’m sure it wasn’t obstacle-free, but would you say the journey has been fairly smooth so far?
Obstacles I have had were little to no family support from my parents. At one time, while still in France, my dad tried to convince me to give it up and go back to engineering. The biggest obstacle though was finding a chef willing to take me as an apprentice because I couldn’t speak the language when we moved over to France.
Alright, so let’s switch gears a bit and talk business. What should we know about your work?
I am a Chef. I specialize in French pastry and desserts along with breads. I am most proud of my journey and how far I have come in achieving a dream of doing of what I do now since I was a young kid. I actually think my background with my previous careers and life experiences sets me apart from others. I do this because I genuinely enjoy waking up each day, going to work and doing something I have such a deep passion for.
Where we are in life is often partly because of others. Who/what else deserves credit for how your story turned out?
Mentors
Mssr. Christoph Bichard. He was the owner and Maitre Patissier that gave me the opportunity in France. Without him, none of this would have happened.
Vincent Caradona. The original owner of Le Petit. Working with him over the years showed me how to run a bakery successfully.
Advocates
Marcel Farge. He has been an avid advocate for Le Petit for years and welcomed me as the new owner with more enthusiasm than anyone else.
Tim and Wynne Curran. They are friends and regular customers and bring everyone they know to the bakery.
