Today we’d like to introduce you to John Olbrych.
Hi John, it’s an honor to have you on the platform. Thanks for taking the time to share your story with us – to start maybe you can share some of your backstories with our readers?
For as long as I can remember I have worked in kitchens. Whether it was washing dishes or prepping. I found my passion and love for cooking at a young age and knew that my ultimate dream was to own my own business. Covid made that dream a reality. In early 2020 I took a job as a sous chef at a new restaurant. Covid caused the restaurant to shut down and I knew this was my chance. My father and I found an old church bus in Myrtle Beach, SC and decided it would be a great vessel for my business. We completed gutted and remodeled the truck. With my design and my father’s ingenuity, Johnny Focaccia was born. Wood-fired pizza has always been a passion of mine and I am grateful that I get to finally share that passion with and for others.
Alright, so let’s dig a little deeper into the story – has it been an easy path overall, and if not, what were the challenges you’ve had to overcome?
This process has definitely not been easy. Every step there was a setback, but with each set back a lesson was learned. Even our first few services were not smooth by any means. But I always say that speed bumps are necessary. It’s never about the obstacle, but the way we pick ourselves up and move forward.
Alright, so let’s switch gears a bit and talk business. What should we know about your work?
I specialize in wood-fired pizza. What sets me apart from others is not only the consistency of my product but the fact that I have an actual wood-fired oven on my food truck. You typically only see those in brick-and-mortars. I am extremely proud in the quality of my pizza and being able to name my pizzas after very significant people in my life, that not only helped me get to where I am today but are a huge part in my business. I think what I am known for best is my take on some of the classic pizzas, such as the Margherita and pepperoni, as well as my take on some unique specials.
What does success mean to you?
Success to me is being able to make a living while doing what you love.
